People spend their money during this time of year in order to reap the rewards of the hopes they have for their relationships with others. Whether those hopes are realized or not, those hopes are fueled and sustained through the advertising that suggests that certain responses will occur when spending habits are turned towards their products. Students Academic Performance in High School Even though a different set of constraints and challenges in education has been faced worldwide, educational development has been actively promoted by means of adapting to rapid global changes (Peretz, 2009). Ensuring quality of education is one of the six Education For All goals agreed by over 160 governments during the World Education Forum in Dakar in 2000; almost every country around the world has committed to enhancing education quality in an effort to achieve the goals of EFA by 2015. Governments seek to offer students an education that equips them with skills, knowledge, and wider perspectives so that students can participate in the social, economic and political lives of their nations (UNESCO, 2009). The Royal Government of Cambodia (RGC) has prioritized educational sector as a key area for national development: capacity building and human resources development is one of the key strategies of the Rectangular Strategy in the third term of the national assembly (RGC, 2004). Cambodian education system is divided into four levels: pre-school education, primary education, secondary education (lower and upper) and higher education. Students from the age of three to five years old are allowed to enroll in pre-school education. To get basic education, students have to at least spend six years of primary education and three years of lower secondary education. After graduating from lower secondary education, students are provided options to continue to upper secondary education or enter secondary -level vocational training programs provided by the Ministry of Labor and Vocational Training (MOLVT). Students can also have chances to pursue their studies in university or vocational training a fter completing upper secondary education (UNESCO, 2008). The Ministry of Education, Youth and Sport (MoEYS) has emphasized education quality at all levels basic, secondary and higher education because it can produce the well-educated and skilled students in order to meet the needs and requirement of the growing labor market. Education at upper secondary level is the foundation for higher education. After upper secondary school, students should have capacity to continue their studies at higher education or to specialize their studies (MoEYS, 2004). To achieve this goal, students are provided options to select the program of study: sciences and social studies. Additionally, students are required to study at least ten subjects which are compulsory to complete upper secondary education. To completely graduate from upper secondary school, students are assessed based on the scores earned at Grade 12, the final grade of upper secondary education, and the score of the national examination (UNESCO, 2008). 1.2 Problem Statement The achievement of high school students has been a great concern to educators, parents, and government. Even though measures have been taken to improve the quality of education, a large proportion of high school students perform poorly in the classroom (P. Pal, personal communication, October 10, 2010). Furthermore, some students are likely to play truant or miss their class very often. As identified in UNESCO National Education Support Strategy, the cost burden, the need for the students to work and a lack of understanding the importance of formal schooling are some of the reasons behind the low grade 12 completion rate (UNESCO, 2010). 1.3 Research Objectives There has been little qualitative research conducted on perceptions of students and teachers towards the factors influencing the students academic performance in high school in Cambodia. Therefore, the intent of this study is to identify those factors influencing students academic performance in high school. Investigation into the factors that might influence students academic performance in high schools may contribute to enhancing students learning abilities in upper secondary education as well as helping them to pursue their higher education easily. 1.4 Research Questions This study aims to answer the following research questions: How do teachers and students perceive factors influencing students academic performance? What are the differences in perceptions between teachers and students toward factors contributing to students academic performance? 1.5 Significance of Study This study is particularly significant for two main reasons. First, it will increase understanding of and contribute to the literature on students academic performance in high school in Cambodia. Second, it is hoped that the findings of this study will contribute to helping all stakeholders, namely, parents, teachers, school communities, and central agents to strengthen efficiency and quality of education in upper secondary education. 1.6 Definition of Concept Page, Thomas, and Marshall (as cited in Ogunbanjo, 2001) defined school performance as an action of a person or group when given a learning task. In education, performance refers to achievement in carrying out of a task, assignment or course. Academic performance is the level of success determined by grade point average at the end of the semester (Lamsis, 2010). Thus, in this study, academic performance is generally taken to mean students ability and achievement in the school work as measured by tests results, performance or behaviour during lessons, grades and reports. 1.7 Proposed Chapter This research study is organized in five chapters. Chapter one will consist of introduction dealing with background information of the study, problem statement, research objectives, research questions, significance of the study. The past literature, which was conducted in different settings around the world, will be examined in chapter two. Next, the research methodology will discuss in detail the participants, method, instruments, tools, data collection, data analysis, ethical consideration and limitation of the study in Chapter three. In Chapter four, finding and discussion will be identified. Finally, conclusion and recommendation will also be discussed in chapter five. CHAPTER 2 Literature Review Factors which influence students performance have been identified as including classroom management, quality of teaching staff, family social-economic status, lack of teaching facilities, inadequate student discipline, lack of student commitment, emotional problems, curriculum contents, learning situation, inadequate teacher instruction, and not enough parental involvement (Asikhia, 2010; Legotlo et al., 2002 ; Nguyen Griffin, 2010). In the study by Asikhia (2010), the focus of the investigation was on the perception of students and teachers on the causes of poor academic performance among secondary school students in Ogun State, Nigeria. The results of teachers perception indicated that teachers teaching qualifications and students background had a smaller effect on the students poor performance but teachers methods of teaching influence poor academic achievement. Students, on the other hand, thought that teachers qualifications and students home environment influenced their poor performance in school while teachers method of teaching and learning materials did not. In the study of factors influencing poor performance of grade 12 learners in two high schools in Limpo province in South Africa, Rammalas study (2009) discovered that parents low-level of education, high unemployment rate, child-headed family, unpredictable home environment, emotional problems, lack of facilities, unavailable learner support materials, lack of discipline, redeployment of education, unfamiliarity of new curriculum influenced students performance in the classroom. In a similar research study conducted in Nepal, Subedi (2003) demonstrated the factors influencing high school student achievement. This study simply aimed to investigate the effect of resources and class size on student performance. The research revealed that the availability and use of resources had a significant effect on student performance. Class size also caused negative effect to student achievement. In a research article by Legotlo et al. (2002), the focus of investigation was on perceptions of stakeholders towards causes of poor performance in grade 12 National Examinations in a province in South Africa. The results in this study revealed that inadequate resources, lack of discipline and poor morale, problems concerning the implementation of government policy, and lack of parental involvement were major causes of poor student performance. In a research study by Ogunbanjo (2001), the focus of the investigation was on the factors influencing the academic performance of underachieving learners in a South African secondary school with an inhibitive learning climate. In order to get in-dept understanding of underachieving students learning performance, a qualitative method was applied. The findings of this study identified the factors as influencing the academic performance of underachieving learners: negative attitude of learners towards their school work, negative attitudes of teachers towards learners and inflexible teaching methods by teachers, lack of parental supervision, undisciplined behavior in class, learner absenteeism, insufficient learner support material, non-encouragement from parents for learners to study, excessive home chore, demotivation and low moral towards teaching as a career, overcrowding classrooms, lack of support from the department and school administration, lack of facilities and resources, lac k of parental involvement, inadequate funding of schools, lack of parental supervision, peer pressure, lack of parental guidance and supervision, learners lack of discipline, indiscipline by learners, illiteracy among parents, and poor insight of learners about the value of education. Taken together, the results, of course, indicate that overcrowded classes, lack of facilities and resources, inflexible teaching method, and lack of parental involvement are supposed to be the fundamental factors which negatively influence the students academic performance in high schools. CHAPTER 3 Research Methodology 3.1 Research Design Qualitative researchers share in the understandings and perceptions of others and explore how people structure and give meaning to their daily lives (Berg, 2009). In a qualitative research, a case study design is used to significantly focus on one phenomenon, which the researcher selects to understand deeply regardless of the number of sites or participants for the study (Mcmillain Schumacher, 2001). Since this study mainly aims to identify key factors that students and teachers perceive as influencing academic performance in a high school, the case study approach will be employed in this study. 3.2 Participant and Sample The target participants in this study will be teachers and students in a high school in Kandal province. I will contact the school principal initially to propose my study and receive the approval before proceeding and contacting potential participants. A purposive sampling method will be employed in this study because I aim to explore in detail participants reasons for performing poorly in their studies. The sample of this study will consist of 4 students and 2 teachers from high school in question. Both male and female participants will be selected. The teachers sample will be the class teachers who regularly facilitate any activities in classroom while 11th-grade students will be chosen in this study. The students sample will include students who learn with the selected teachers. 3.3 Data Collection Unlike a quantitative method, a qualitative data gathering procedures often involve spending a lot of time in the natural setting under study or with the research participants collecting relevant information unobtrusively (Gay, Mills Airasian, 2009). Choosing data collection strategies is a process of deciding among available alternatives for collection and corroboration of data and of modifying ones decisions to capture the reality of the phenomena (McMillan Schumacher, 2001). As the purpose of this study is to gain in-depth understanding of the factors contributing to students academic performance, participant observation, semi-structured interviews and informal conversation will be carried out to collect the data. The interviews will consist of open-ended questions and will be tape-recorded (see Appendix below for the details). Individual face to face interview and informal conversation will be used for teachers and students. I will make an appointment with the participants and inform them about the reasons of conducting this study, and request for their consent to participate in my study, before carrying out interviews. The participants will be provided options to select convenient time and comfortable place for the interviews in order to ensure full cooperation and trust. I will bring a tape recorder on scheduled interviews, and with the participants permission, record the interviews which will be expected to take around 1 to 2 hours and occur in the school campus or outside the school. Interview questions will follow a general list of topics. The purpose of these interviews is to allow those involved in a school to describe in detail their perceptions and experiences. In addition to these i nterviews, I will carry on informal conversations with participants at the beginning or end of the meeting to gain more specific concepts and experiences about the influencing factors on students academic performance. Participant observation will be also employed to collect data. The emphasis during observation is on understanding the natural environment as lived by participants without manipulating (Gay, Mills Airasian, 2009). After getting permission from school principal, I will visit the school for two weeks and significantly observe what goes on in classroom and during recess periods. The observation checklist will mainly focus on time management, environment in the classroom, teaching method, and behavioral patterns of students. Each observation will take around 45 minutes. Additionally, field notes will be written at the end of each observation describing in detail the setting and activities during the lessons. To assure the accuracy and details of these notes, I will spend several hours for recording notes after leaving the field. Official documents of the school such as students attendance record, and yearly academic report will be taken with permission of the school principal, teachers and students. 3.4 Data Analysis Data analysis is begun from the initial interaction with participants and continued that interaction and analysis throughout the whole study (Gay, Mills Airasian, 2009). As data are collected from the participants, I will examine and reexamine the data in search of themes and patterns in the data. Also, prior data and newer data will be continually compared to reduce less useful data. After gathering the data from the field setting, I will listen to the tape recordings, transcribe the interview tapes and analyze the participants responses. I will organize and prepare all data into different types of information depending on the sources of information. In addition, I will read through all data collected carefully to obtain general idea of information. Coding process will be used to organize information into categories or themes. Then these themes will be chronologically sorted into table display in order to discuss interconnected themes. Finally, I will make interpretation of themes. 3.5 Ethical Consideration Before starting the data collection, I will ask the permission and approval from school principal, teachers and students for observation or tape-recorded interviews. I will explain the study objective verbally and in writing to participants and tell them truthfully that their involvement is voluntary. I will fully explain any potential benefits to school principal, teachers, and students as a result of my study. Additionally, the participants will be informed of all data collection devices and activities. If at any point during the course of the interview the participants decide they no longer desire to continue, they will feel free to simply stop the interview. To avoid any harm to the participants, their names and school will be held in strictest confidence and will never be attached to any data or report that may result from this research. I will treat the participants with respect and give the participants pseudonyms. Personal identifiers will not be included in the research repo rt released to the public in order to avoid the identification of participants. The participants will be told that their responses will be kept confidential and that no one known to them will have access to the information provided and no one can link the analyze to their names. Also, verbatim transcriptions and written interpretations and reports will be made available to the participants. 3.6 Limitation of the Study This proposal has some specific limitations. First, the researcher will only conduct this study in a high school in a province in order to identify influencing factors on students academic performance. Second, since the study will be conducted in a small number of students and teachers in a high school in Cambodia, so the results will not generalize the factors influencing students academic achievement in all high schools nationwide. Third, the purpose of this research is not to provide broad generalizations, but to provide an in-depth analysis of factors influencing students academic performance in high schools. Finally, some activities, events and information which occur at specific period of the school calendar will not be captured during a short period of visit by the researcher.

Poverty occurs in most parts of the world. Nevertheless, the more serious and problematical poverty takes part in the third world and the southern parts of the globe. First of all, we have to clearly define the word “poverty';. In a broad sense, it means that people within this “poverty'; region are poor or have a lower average income per capita than other regions. To a deeper approach, we refer “poverty'; as people have low educational backgrounds, lack of food supplies, or people with lower standard of livings, etc. According to the Webster’s New World Dictionary, the word “poverty'; can be defined as: 1) the condition or quality of being poor 2) deficiency; inadequacy 3) scarcity (Webster’s p.461). Generally in this essay, we will examine the facts that lead to the poverty of these third world and southern countries. The first and the most serious problem that causes by poverty are hunger, or preciously, malnutrition. We can find these kinds of problems almost all over Africa and some other underdeveloped countries. These were witnessed by thousands of people through TV, radio, newspaper, journals, etc. “In the early 1980s, the mass media dramatically brought us the picture of hunger from Africa – starving children, skin and bone, with their bloated bellies, too weak to even stand up.'; (Warnock p.1) At the same time, people living in more developed countries or wealthy states are enjoying different kinds of delicious meals and dumping whatever they don’t like. Why would this happen? Can we refer this to the government or economical policies that rise the problems? To further explore the problem of hunger in Africa, we can easily relate this to poverty. In fact, there may be some other problems that cause the hunger. For example, local drought in the African Sahel that damages t he cropping; which in turn shorten the local food supplies. The other factor is the rapid population growth in Africa. Increasing capita means an increase demand of food. People in Africa are rarely taught the knowledge of birth-control. “If you have money you eat well, no matter how fast the population around you is growing and no matter how short the supplies of energy or land or fertilizer.'; (Kent p.77) According to Kent’s view, we shall see that money can buy off th... ...ization.'; (Jackson p.440) Dependency theory actually suggests that LDCs should not follow the Western route to development. It also suggests that forcing the undeveloped countries to compete globally will only increase the gap between Third World countries and developed states. In other word, it increases poverty in those Third World countries. The existence of these Third World countries is only to provide cheap labors for the benefit of richer states. In the above case (Indonesia), government growed crops that are for sale on the world market for cheap prices rather than to provide food for the poor. This is a good example of benefiting the Western states while giving up the whole interest of domestic people. We can see that Third World and southern countries like Africa and Indonesia are still facing the problem of poverty. In order to work their way out, the governments should apply some appropriate policies and economic applications to overcome the problem. On the other hand, the richer states or more developed countries should provide the necessary financial aid to those poorer countries. They should work hand-to-hand in order to strengthen the global benefit and interest.

Emptiness in ââ¬ËBuddhismâ⬠is the reality of the existence of ourselves, and all the phenomena around us. According to the Buddhist point of view, seeking reality and seeking liberation amount to the same thing. The person who doesn't want to seek reality doesn't really want to seek liberation. If you have to look for it outside yourself, in another place, then you are mistaken. You cannot seek reality outside yourself because you are reality. Perhaps you think that your life, your reality was made by society, by your friends?If you think that way you are far from reality. if you think that your existence, your life was made by somebody else it means that you are not taking the responsibility to understand reality. You have to see that your attitudes, your view of the world, of your experiences, of your girlfriend or boyfriend, of your own self, are all the interpretation of your own mind, your own imagination. They are your own projection, your mind literally made them up. If you don't understand this then you have very little chance of understanding emptiness.You cannot seek reality outside yourself because you are reality. Perhaps you think that your life, your reality was made by society, by your friends? If you think that way you are far from reality. if you think that your existence, your life was made by somebody else it means that you are not taking the responsibility to understand reality. A basic doctrinal assertion in the Buddhist tradition states that Buddhism or ââ¬Å"no selfâ⬠means that no permanent identity comtinues from one period of time to the next.This according to them is not a pessimistic point of view but rather a simple realistic acceptance of the constantly changing human personality and all of reality as well. They understand that if everything changes, then it is possible for everything on earth to become new. If they grasp fully the essence of ââ¬Å"emptinessâ⬠, then it would be possible to face even the toughes t situations in life with a feeling of lightness and peace of mind. With this in mind, one can begin to understand what it means for a Buddhist to cross out the word ââ¬Å"Iâ⬠.Buddhists can begin to erase this word by reallizing that there is no permanent self to hold onto or protect. Furthermore, emptiness is a mode of perception, a way of looking at experience. It does not add or subtract anything from the actual data of physical and mental events. The main goal in his first address was to keep the nation together and to prevent the upcoming Civil War. Prevention Strategies for Escherichia Coli a) As the snack food is made from meat, there are four types of bacteria that will possibly contaminate it which are Escherichia.coli, Salmonella, Staphylococcus aureus,and Listeria monocytogenes (FSIS, 2015). Escherichia.coli is a bacterial that is usually present in the intestines of humans and animals. Although, most of them are harmless as they play an important role in the intestinal tract of a healthy individual. However, there are a few of them that are pathogenic as they can result in diarrhea and can be transmitted through the contact of human or animalfaeces. Altogether, there are sixpathotypes that are linked with diarrhea which are as follows Shiga toxin-producingà Escherichia.coli (STEC), Enterotoxigenic Escherichia.coli (ETEC), Enteropathogenic Escherichia.coli (EPEC), Enteroaggregative Escherichia.coli (EAEC), Enteroinvasive Escherichia.coli (EIEC), Diffusely adherentà Escherichia.colià (DAEC) (CDC, 2015). However, the Escherichia.coliO157 strain, which is classified under Shiga toxin-producing Escherichia.coli (STEC), is considered the most harmful as it causes bloody diarrhea, kidney failure and can result indeath (Anon., 2015). It infects its host by producing large amounts of Shiga toxins that damages the intestinal lining severely to cause Hemorrhagic Colitis or otherwise known as bloody diarrhea. It can also cause Hemolytic uremic syndrome which results in kidney injury (Koo, 2014). Salmonellais a common bacterial that usually cause food poisoning which targets the stomach and intestines. It is normally present in meat, eggs, unprocessed milk and poultry (Bech, 2014). The symptoms are diarrhea, nausea, fever, stomach cramps, and vomiting which usually last for 4 to 7 days. The incubation period is between 12 and 72 hours upon infection (England, 2014). However, one must consume Salmonella contaminated food in order to cause infection (FSIS, 2015). Staphylococcus aureusis a common bacteria found on the skin, nasal passages, throats and hair of healthy individuals.Staphylococcalfood contamination can occur when a person who is infected with the bacteria handles the steakwithout proper sanitary handling procedures. Other possible sources of meat contamination of Staphylococcus aureus can also take place such as the surfaces and equipment that the meat is prepared on (Anon., 2015). Staphylococcal food poisoning happens when an individual ingest the enterotoxins that are produced in the contaminated meat, often due to the improper heating up of the meat to kill off most of the bacteria (USFDA, 2014). Listeria monocytogenesis a bacterium that is usually found in soil, water, uncooked and processed meat, cooked or processed food, smoked salmon, vegetables and dairy products (CDC, 2013). Ingestion of food contaminated with this bacterium can cause Listeriosis which is a serious infection (CDC, 2013). AlthoughListeria monocytogenescan be killed by proper cooking, the bacteria can still contaminate the cooked meat due to physical hazards such as poor food handling practices and sanitation (FSIS, 2015). Another potential food safety hazard that I have identify is the use of herbs and spices to marinate the steak. Herbs come from plants and spices are from seeds, bark or roots of plants (Ward, 2010). Because they are from plants, which contains spore-producing bacteria, this indicates that the bacteria spores is capable of further contaminating raw meat which is in contact with soil and vegetative origin.This would introduce additional microbiological hazards such as Bacillus spp. and spore forming organisms which are able to survive the drying process and continue to germinate to produce toxins. During the process of handling with this dried snack food, there should be a food safety management system such as The Hazard Analysis and Critical Control Point (HACCP) system. This system is used worldwide by all food businessesto identify and control microbiology activity as well as physical and chemical hazards that might be present during production. It consists of seven principles that govern and maintain food hygiene procedures (ASQ Food, 2014). Therefore, I would advise her to take note of the possible food safety hazards that have been mentioned and the procedures of manufacturing this dried snack food has to be in compliance to the Hazard Analysis and Critical Control Point (HACCP) system. b) There are several information that I would like to know as to assist the businesswoman in preparing the dried snack food safely for consumers. The following are the information required: Where was the meat from? Normally, the cattle are raised till maturity in a farm where they are given formulated food. During cattle raising, the cattle are injected with antibiotics to prevent diseases. In order to slaughter the cattle legally, a withdrawal period is needed from the time the antibiotics is given. This is to give sufficient amount of time for the antibiotic residues to be released from the cattle. The United States Department of Agriculture Food Safety and Inspection Service (FSIS) would conduct sample testing for antibiotic residues upon slaughtering. Results have shown that the percentages of residue violations are very low and there are no traceable antibiotic residues present in the tissues of the cattle (FSA, 2015). There are several factors that have to be taken into consideration such as the conditions of the farms that the cattle are living and the food that they consume. For example, improper drainage of faeces, design of feeders and drinkers can contribute to the accumulation of bacterial contamination in the farm which leads to the dirty cattle. The cattle are then infected with diseases such as pneumonia, coccidiosis and salmonellosis. Thus, it is important to have a healthy livestock of cattle to avoid all these problems. There are two factors that can contribute to the contamination of meat production chain such as direct and indirect contact of contamination. Direct contact can occur when bacteria that are present on the skin of the cattle such as excrement and mud which can contaminate the meat during the slaughtering process. Whereas, indirect contact could occur when the hands, tools and equipment that are used to slaughter the cattle contains bacteria which will then infect the meat (FSA, 2002). How was the uncooked meat handled? For proper handling of raw beef, place them in a sealed disposable plastic bag. You can either freeze it at -17.8à °C so as to keep it longer (about 6 to 12 months)or refrigerate at 4.4à °C but have to consume it within 3 to 5 days (Safety, 2015). The reason why the meat is to be kept at cold temperatures is because this is to inhibit bacterial growth. Time, temperature and conditions of marinating and cooking the meat? First, the raw steak is marinated with herbs and spices which will introduce additional microbial hazard such asspore forming bacteria to the meat. Thus, for safe marinating procedures, do not marinate at room temperature as most bacteria are able to grow quickly. Instead, marinate the meat in a cold environment so as to avoid entering the danger zone, which is between 4à °C and 60à °C. For beef steak, the approximate time taken to marinate would be 2 to 4 hours (Stradley, 2014). For safe cooking of steak, cook them at a minimum internal temperature of 62.8à °C for about 4 5 minutes per side and allow the meat to rest for at least 3 minutes before eating. This is done to kill off most of the bacteria that might be present on the meat. However, do not cook the steak partially as this does not destroy most of the bacteria and might multiply (USDA, 2015). Time and temperature of the drying process? I would suggest drying the marinated steak strips using an oven at 75à °C as there is a constant circulation of dry air and heat source. The temperature is important in drying this snack food because gentle heatingwill not be sufficient as this does not ensure that any bacteria that might still be present on the meat prior to cooking are killed (USDA, 2015). For example, bacteria such as Bacillus flavother musTà have a maximum temperature cardinal value of 72à °C and if the meat is cooked to the temperature of 60à °C, the bacteria will still be able to survive (Todar, 2008 2012). Thus, they will continue to multiply in numbers and colonize the meat. Storage of final dried meat product? How long is the meat product stored? Always ensure to store dried meat in a vacuum packaging as this will minimize oxygen levels which inhibit the growth of aerobic bacteria. It also helps to reduce the oxidation of the meat which will result in meat spoilage. These will extent the shelf life of the snack food (Anon., 2012). A sealed dried meat product can be stored to a period of 12 months. However, if the dried meat product is made from home, then it can only be kept for about 1 to 2 months (USDA, 2013). Is water activity taken into consideration? Water is a requirement for bacteria growth, thus, it must be removed so as to inhibit the growth of microorganisms. It can be reduced by the drying process and the addition of salt to preserve the meat. How the salt works is that it would absorb all the water on the meat by the process called osmosis (Martin R. Adams and Maurice O. Moss, 2008). Are there hygiene practices done in the preparation of the dried snack food? To prevent cross-contamination, good hygiene practices and procedures are required in regards to handling the snack food. Food handlers should always wash their hands thoroughly with surfactants such as soap before and after handling with meat products. Always clean and disinfect all utensils, equipment and work surfaces before the preparation of the meat product. And do not mix raw and cooked food. Instead, incorporate the use of separate working and storage areas of raw, cooked and dried meat products (FSA, 2015). c) I would suggest the use of aerobic plate count and immunomagnetic separation to test the presence of Salmonella spp. and Escherichia.coli O157 In aerobic plate count, dilutions of the food sample are carried out and are then plated onto agar plates which contain suitable growth nutrients to favor the growth of microorganisms. The plates are then incubated at temperatures that bacteria can grow. After the incubation period, the total numbers of bacterial colonies arecounted; therefore, the total number of viable cells can be estimated (Hayes, 1995). Thelevels of Aerobic Colony Count (ACC) are used as a guidance to determine if the food product is safe for consumption (Agency, 2009). For example, if the Aerobic Colony Count (ACC) levels of bacteria have exceeded the expected level, the product cannot be consumed. For Salmonella spp., the infectious dose is normally 105 organisms, which is quite a big number. Whereas, as for Escherichia.coli O157, the infectious dose isless than 50 organisms (Inc., 2004). For Escherichia.coli O157 and Salmonella, Immunomagnetic separation is used as the ââ¬Å"gold standardâ⬠to detect and isolate the bacteria as it is specific and sensitive. Then targeted organism is then isolated which will undergo serotyping for characterization (Inc, 2004). According to the guidelines for the microbiological safety of ready-to-eat foods, they are to be cooked and processed properly, especially with the addition of herbs and spices. It also includes bacteria that can possibly be from the source of poor hygiene. Lastly, tests on ready-to-eat foods are required so that food products which are not in compliance with the microbiological food safety criteria can be identified to protect public health (Agency, 2009).
